Fiercely tart and wildly flavorful, umeboshi is a savory plum pickle used throughout Japanese cuisine to impart umami complexity to steamed rice, soups, braises, and sauces.
In tune with the seasons, these plum pickles can only be made once a year, coinciding with the harvest. Made in small batches using local California fruit and heirloom red shiso.
Made using authentic traditional methods, these ume plums have ideal melt-in-your-mouth texture, perfect acidic brightness, and vibrant red color imparted naturally by the shiso leaves.
Store in a cool area out of direct sunlight.
