Intensely aromatic and licorice-sweet, these fragrant fennel seeds are grown by a third-generation Greek farmer on the island of Euboea, long known for its tradition of cultivating beautifully balanced fennel.
Fennel contains myriad beneficial compounds in appreciable amounts – from calcium and flavonoids to several amino and fatty acids – and is known for its ability to treat stomach muscle spasms and digestive issues.
Gently crush the seeds with a mortar and pestle before cooking to release the essential oils.
Add to pasta sauces, seafood entrées, or if you're feeling adventurous use to make your own pepperoni. Also makes a wonderful herbal tea that helps aid digestion. This fennel is extra potent and a little goes a long way, so make sure to use closer to half of what most recipes call for.
